Polenta

When people stop me and tell me which bread is their favorite, I can usually guess: POLENTA!

The corn which comes from The Nitty Gritty Grain Company in Charlotte, VT, is cooked into a porridge, then cooled and mixed in with a high protein bread flour and baked in a pan loaf. This process creates a very moist bread which is one of the reasons people love it.
